Zupas Wisconsin Cauliflower Soup Copycat Recipe

Zupas is one of my favorite soups and sandwich places to go to. I've tried so many different things and haven't been disappointed yet. This is one of my favorite soups from there. My other favorite is the Chicken Enchilada soup.

Zupas Wisconsin Cauliflower Soup Copycat Recipe:

2 Tbsp butter
1 white onion, diced
2 tsp minced garlic
1/4 cup flour
2 cups milk
3 cups chicken broth
2 tsp salt
1 head cauliflower, chopped
1 cup shredded pepperjack cheese
2 cups shredded sharp white cheddar cheese
1 bag bacon pieces

1. Melt butter in a large saucepan. Add garlic and onion; sauté until onions are tender.
2. Add flour and stir until mixture clumps up.
3. Gradually whisk in milk. Add broth, salt, and cauliflower.
4. Simmer for 15 minutes or until cauliflower is tender.
5. Transfer soup to a blender and blend until smooth. Pour blended soup back in pot. Add cheese and stir until completely melted. Top with bacon, cheese, and hot sauce.
