Slow Cooker Mashed Potatoes

This method of cooking mashed potatoes is so convenient. The texture is a little different, but It's worth it if I am able to forget about the potatoes for a few hours or longer.

Slow Cooker Mashed Potatoes

2 1/2 lbs Sierra gold potatoes or red potatoes
1/2 cup water
1/2 cup butter, cut into chunks
1/2 Tbsp salt
3/8 tsp ground pepper
2/3 cup milk, warmed

1. Place potatoes and water in a slow cooker. Top with cubed butter. Season with salt and pepper. 

2. Cover and cook on high for 4 hours. 

3. Mash potatoes with a masher. Do not remove excess water. This adds to the creamy texture. Add desired amount of warm milk. 

4. Keep warm on low until ready to serve.  Potatoes keep consistency for a couple hours after mashing. Just keep the lid on the slow cooker.
