Spicy Sausage Pasta

This recipe was definitely a hit. It's a great recipe for those who love spicy food, but can also be made without all the spiciness. If you are looking for an EASY delicious pasta recipe, you should give this one a try. It is a one pot dish. Yay for cutting down on dirty dishes!

Spicy Sausage Pasta


1 Tbsp olive oil
14 oz smoked peppered sausage, sliced
1 cup onion diced
2 garlic cloves, minced
1 (10 oz) can rotel, mild. You can use the original if you want it spicier. 
1/2 cup heavy cream
8 oz penne pasta
1 1/4 cup shredded Monterey Jack cheese
Pepper, to taste

1. Heat oil in skillet over medium high heat until hot. Add sausage and onion. Cook 4-5 minutes or until lightly browned. Add garlic and cook for about 30 seconds. 

2. Add the chicken broth, rotel, cream, uncooked pasta, and some pepper and stir. Bring to a boil. Cover and reduce heat to medium-low. Cook 15 minutes, stirring 1-2 times. 

3. Remove from heat and stir in 1 cup of cheese. Sprinkle with salt and pepper and serve.
