PF Chang's Lettuce Wraps Copycat Recipe

I have never had PF Chang's Lettuce Wraps, so I have no idea if these taste anything like them. What I do know is that these were good enough to eat them all up.

Lettuce Wraps

1 Tbsp + 1 tsp rice vinegar
2 1/2 Tbsp soy sauce
1 Tbsp sesame oil
1 Tbsp peanut butter
2 tsp chili garlic sauce
1/2 Tbsp honey
Salt and Pepper
Crisp iceburg lettuce leaves
1 lb ground chicken, pork, or turkey
1/2 onion, minced
1/2 can water chestnuts, chopped
3 green onions, chopped
1 Tbsp ginger, minced
2 garlic cloves, minces

1. In a microwave safe bowl, mix together rice vinegar, soy sauce, sesame oil, peanut buter, chili sauce, honey, pepper, and 1/2 Tbsp water. Microwave and stir until smooth, about 20 seconds.

2. Heat skillet to high. Cook meat and onion until meat is browned. Add garlic, ginger, salt, and pepper. Pour in sauce and stir until combined. Add water chestnuts and green onions. Cook until onions are soft.

3. Tear off a crisp outer leaf of iceberg lettuce. Fill lettuce leaf with filling and top with chopped peanuts.
