Mexican Manicotti

Mexican Manicotti

These were definitely good, but I'm lazy and manicottis aren't the fastest to make. Next time I will probably take a shortcut and use medium tortillas instead of the manicottis. 

Mexican Manicotti

1 lb lean ground turkey or beef (I used ground turkey)
16 oz fat free refried beans
12 ounce bottle green taco sauce
1 packet taco seasoning mix
14-16 uncooked manicotti shells
1 cup grated cheese

1. Brown ground turkey (or beef) and drain. Mix cooked ground turkey with beans, taco seasoning, and 1/4 cup cheese. 
2. Spoon meat and bean mixture into a ziplock bag. Cut the corner. Squeeze the mixture into both sides of the manicotti shell. 
3. Lay stuffed shells into a 9x13 inch pan.
4. Mix the green taco sauce with about 3/4 bottle of water. Pour sauce over manicotti. Cover with foil and bake at 350 degrees for 1 hour. 
5. Remove from heat and sprinkle with cheese. Put back in oven (without foil) until cheese is melted. Garnish with green onions, olives, tomatoes, cut lettuce or whatever else sounds good to you.
