Herb Potatoes and Carrots
Here is a healthy way to mix things up a bit and get some vegetables into your diet. You can only eat salads and raw vegetables for so long before they start getting old.

Herb Potatoes and Carrots


Baby Carrots
Red Potatoes
Dried minced onion or 1/2 fresh onion sliced or diced
Italian Seasoning
Garlic Salt
black pepper
dried thyme


Cut potatoes into chunks. Throw cut potatoes and carrots into 8x9" pan (larger or smaller depending on how many vegetables you want). Sprinkle seasonings on top. Mix and then sprinkle all seasonings over vegetables again. Mix one last time. Add 1/2 Tbsp chunks of butter on potatoes and carrots.  Cover with foil and bake at 350 degrees for 45 minutes. Enjoy your warm healthy vegetables.

* You can also add a cheese garlic seasoning packet or ranch or any other seasonings that sound good.
