Easy Chicken Fried Rice

I made this fried rice along with my Panda Express Orange Chicken Recipe. It was so good I felt like I was eating out, but for a lot less!

Easy Chicken Fried Rice Recipe

2 cups prepared rice (best if a day old, but fresh rice works too)
1 chicken breast, cut into bite-size pieces
1/2 cup frozen mixed vegetables (I used the carrot, corn, and peas mixture)
1 green onion, chopped (optional)
1 garlic clove, minced
1 egg
3 tsp sesame or olive oil, divided
About 3 Tbsp soy sauce (or more/less depending on your liking)

1. In a small dish, whisk egg with 1 tsp oil; set aside.
2. Heat 1 tsp oil in a large skillet (or wok) over medium-high heat. Add chicken and cook until heated through. Put on a plate and cover with tinfoil to keep warm.
3. Heat remaining tsp of oil in skillet, then add frozen mixed vegetables and green onion. Heat until tenter, about 2 minutes. Add garlic and cook for about 30 seconds more. Push vegetables to side of skillet. Add egg and oil mixture into the center and scramble.
4. Add cooked chicken, rice, and soy sauce to skillet. Toss well to combine.
