Spicy Tuscan Soup Recipe

Spicy Tuscan Soup

We went to dinner at the Olive Garden and tried their Spicy Tuscan Soup. It was instantly a favorite. I came straight home and made this. It is a little different from Olive Garden's Spicy Tuscan Soup, but it is definitely just as good. It is great as a main dish or as a soup on the side. 

Spicy Tuscan Soup Recipe

1 pound Spicy Breakfast Sausage
1 whole Medium Red Onion, Diced
2 slices Bacon, Diced
3 cloves Garlic, Minced
3 whole Medium Potatoes
1 quart  Warm Water
3 cubes Chicken Bouillon
¼ bunches Kale, Roughly Chopped
½ cups Heavy Cream
Salt And Pepper, to taste

Cook sausage over medium-high heat until cooked. Drain grease and set aside.

In a large pan, cook onions and bacon. Reduce heat to medium and cook until onions are clear. Add minced garlic and cook 1 minute longer.

Slice potatoes in half lengthwise and cut into 1/4″ slices. Add warm water, bouillon
cubes and potatoes to the large pan. Simmer for 15 to 20 minutes or until potatoes are done.

Add in the remaining ingredients, including the sausage. Simmer for 5 minutes.
Let cool and serve.
