Poppy Seed Chicken Casserole

My sister-in-law made dinner for us one night and this is what she made. I really liked this Poppy Seed Chicken Casserole so I ended up making it myself a few weeks later. You should give it a try. It is quick and easy to make.

Poppy Seed Chicken Casserole Recipe

2 1/2 cups chicken, cooked and cubed
1/4 - 1/2 cup sour cream
1 (14.5 oz) cream of chicken soup
1 cup crushed ritz crackers (about 3/4 roll)
1/4 cup melted butter
1/2 Tbsp poppy seeds

Additional ingredients to make it fancy:
1/2 tsp Worcestershire sauce
1/2 tsp celery salt
1/2 tsp minced garlic
1/2 Tbsp lemon juice
1/8 tsp pepper

Preheat oven to 350 degrees. 

Boil raw ricken with salt and pepper until done. Boil with an onion or in chicken broth if you want more flavor. 

Cut chicken into 1 inch cubes. Place cubed chicken in 9x9 casserole dish. 

Stir together the soup and sour cream. If you wish to add the additional ingredients, add them now. Pour soup mixture over chicken. 

In separate bowl, stir together crushed crackers, poppy seeds, and melted butter. Sprinkle over chicken mixture. 

Bake for 30 minutes in preheated oven until the top of the casserole is browned and the sauce is bubbly. Serve plain or over rice. If you want some vegetable, steam up some broccoli and mix it into the mixture.
