Meatball Stroganoff

This recipe is so delicious... seriously! It is my new favorite recipe. My husband loved it too and already wants me to make it again.

Meatball Stroganoff Recipe

Frozen Italian style meatballs
Olive oil (about 1 Tbsp; enough to brown up meatballs)
2 cups beef broth
1 tsp Parsley
1 tsp oregano
1 tsp basil
1/4 cup plus about 1 tsp sour cream (I used fat free)
1 cup heavy whipping cream (I used half and half with about 1 tsp of corn starch to thicken)
Wide egg noodles (about 2- 2 1/2 cups dry)
Salt and pepper to taste

Heat oil in large saucepan. When hot, add frozen meatballs. Use enough meatballs to cover the bottom of the saucepan. Cook until browned. Add 2 cups beef broth. Add basil, oregano, parsley, and some salt and pepper. Stir and let simmer.

In separate pot, start cooking the noodles (follow cooking instructions on package).

Add heavy whipping cream or half and half. Stir. Bring to a boil (this is important in order to thicken it up). Once thickened, add sour cream. Add cooked drained noodles and stir. Cook a little bit longer. Remove from heat and let sauce thicken. Serve.
